I’ve been working in this industry for more than thirty years. I started as a server, then moved into management, and eventually became a GM. Then I wanted to know more—especially what happened on the other side of the pass. So I moved to sous chef and then executive chef. And by now I know every goddamn dark corner of a restaurant.

But it’s a living organism. It shifts, reacts, and moves constantly.
What worked on Monday guarantees nothing for Tuesday.
What works at lunch can fall apart at dinner.
And occasionally, what works at eight p.m. crashes at nine.
Because service doesn’t repeat itself. It resets and fucks with you again.

And in hospitality, nothing sticks together by sheer miracle. Every table is a new adventure, every client is different, and every shift is a new challenge.
You don’t handle a regular brunch the way you handle Mother’s Day brunch. You don’t approach New Year’s Eve like a regular service. And don’t make the crucial mistake of comparing Valentine’s Day to any other busy night.

Not just what works, but everything that fucking doesn’t, and it will challenge not only your talent, skills, and your patience, but also your nerves and your ability to thrive under chaos.

It happens every goddamn week.

SUNDAY FUCKING BRUNCH

A different animal from Saturday night; the mother of all fucked-up services. It's the cherry on the cake because Sunday comes with a goddamn sledgehammer.

But don't be fooled by the sweetness of the menu or the family vibe. It's just as ruthless as Saturday night—only in a different way; the rhythm is unpredictable. The pace is unstable. The prep is heavier.
And when it goes sideways, it hits ten times fucking harder.
Because it doesn't break you all at once, this little shit will take its sweet time. And by the time it starts chewing you up, you're already in the weeds.
Then it wears you down, table by table, order by order, hour by hour, relentlessly until the last order, the last guest, the last table, and the last drop of fucking mimosa.

And then you have to reset for dinner.
So at that point, all bets are off.
